  • HLS 4640 - Homeland Security Theory, Policy and Practice (3)


    Prerequisites: HLS 3000 , HLS 3200 , HLS 3500 . This course will serve as a capstone course for the homeland security concentration. Students will demonstrate their knowledge of theory, policy and practice in homeland security through their participation in a project that addresses a contemporary issue in homeland security. Best practices in homeland security will also be discussed.

    Basic principles of sanitation and safety and their relationship to the hospitality industry. Course meets the standards for National Sanitation Certification. Students must pass certification examination to receive credit. All prerequisite courses must be completed with a grade of “C” or better.

  • HADM 2900 - Hospitality Work Experience I (0)


    Prerequisites: HADM 1000  and HADM 1100 . This course provides opportunities for students to obtain professional work experience in various sectors of the hospitality and tourism industry. Emphasis will be placed on mastering specific skill sets identified in the work experience manual. (HADM 2900 satisfies 250 hours of the 1000 hours of work experience required.) All prerequisite courses must be completed with a grade of “C” or better.

  • HADM 3000 - Procurement in Hotels and Restaurants. (3)


    Prerequisites: HADM 1000 , HADM 1100 , HADM 2010 . This course covers purchasing of supplies for hotels and restaurants. Emphasis on procurement, yield test, inventory control, specification, planning, forecasting, market trends, terminology, cost controls, pricing, and ethics in food service. All prerequisite courses must be completed with a grade of “C” or better.

  • HADM 3010 - Food, Beverage and Labor Cost Control (3)


    Prerequisites: HADM 1000 , HADM 1100 , HADM 2010 , ACCT 2500 . This course will focus on the principles of food, beverage, and labor cost controls with emphasis on cost and sales concepts, cost/volume/profit relationship, food purchasing control, food receiving controls, food sales, production controls, beverage controls, variance analysis, and establishing performance standards. This is a certification course by the National Restaurant Association. All prerequisite courses must be completed with a grade of “C” or better.

  • HADM 3020 - Food and Beverage Production (3)


    Prerequisites: HADM 1000 , HADM 2010 , HADM 3000 , HADM 3010 . The course will focus on food service systems, including menu management, purchasing, and production applied to an operating environment. Laboratory includes demonstration of basic food production techniques, culinary, and management principles. All prerequisite courses must be completed with a grade of “C” or better. (One-hour lecture and three hours laboratory)

  • HADM 3030 - Advanced Lodging and Operations Management (3)


    Prerequisites: HADM 1100 . This course provides opportunity for students to virtually operate a large hotel utilizing simulation software. The simulation software package covers: reservations, front office operations, accounting, and housekeeping functions. All prerequisite courses must be completed with a grade of “C” or better.

    This course provides students with the concepts and logistics of event planning and management. The course entails: marketing, planning costing, executing, and evaluating of events.     This course explores the history of the gaming industry and functions of casinos in relation to lodging facilities, restaurants, and resorts. This course also provides an overview of legal, social, and economical issues throughout the United States and abroad. All prerequisite courses must be completed with a grade of “C” or better.

  • HADM 3060 - Eco and Cultural Tourism (3)


    This course is a study of purposeful travel and tourism natural habitats to create an understanding of the cultural and natural history pertaining to the environment. The course emphasizes not altering the ecosystem while producing economic benefits to local people and governments that encourage the preservation of the inherent resources of the environments locally and elsewhere. Heritage and cultural tourism sites in North Carolina will be explored. All prerequisite courses must be completed with a grade of “C” or better.

    Prerequisites: HADM 1000 , HADM 1100 , HADM 2000 , HADM 2010 , HADM 2900 . An analysis and synthesis of current trends, business practices, and legislative and socioeconomic issues, impacting the hospitality and tourism industry. Students receive training in the 7 Habits of Highly Effective People resulting in a certificate. Executives from the hospitality industry provide students and faculty with insights into senior-level managerial decision-making.   • HADM 3900 - Hospitality Work Experience II (2)


    This course is a continuation of HADM 2900 . Students will continue to obtain professional work experience in the hospitality industry. Attendance at monthly seminars is required. Biweekly reports, a reflection paper and portfolio is required. (This course satisfies the second 250 hours of the 1000 hours of work experience required.) All prerequisite courses must be completed with a grade of “C” or better.

    This course introduces students to the basic principles of entrepreneurship and franchising opportunities in the hospitality and tourism industry. Emphasis will be on selecting a franchise or development of a start-up business. Various franchised hospitality businesses will be analyzed for marketing effectiveness and financial performance. All prerequisite courses must be completed with a grade of “C” or better.

  • HADM 4100 - Research Methods Hospitality and Tourism (3)


    Prerequisites: HADM 1100 , DSC 2010  or EDU 3700 . This course will provide students with a working overview of the research process. Emphasis is placed on demonstrating a solid understanding of research concepts. Topics include research design, instrument development, data collection, and analyzing and presenting research results. Students will conduct an original research project as part of the course. All prerequisite courses must be completed with a grade of “C” or better.

An overview of service marketing as applied to the hospitality industry, including but not limited to: unique attributes of service marketing, consumer orientation, understanding consumers and consumer behavior, market segmentation principles, target marketing, product planning, promotion planning, market research, and competitor analysis.     Prerequisites: HADM 4600 , HADM 4700 , HADM 4910 . This course will provide a comprehensive understanding of on-site contract food service, menu layout/design and analysis, and menu adjustments in a food service marketing context. Students must pass certification in order to receive a grade in this course segment including the rationale for outsourcing and the need for entrepreneurship relevant to both the client-based organization and the managed-service provider.     This course explores the impact of the New South on the arts and Humanities in America, using these historical milestones: the 1896 Plessy v. Ferguson Decision, the Harlem Renaissance, the Great Depression, Brown v. Board of Education (1954), the 1960s Civil Rights Movement, and the post-1970s thrust for cultural diversity.

    Prerequisites: JAZZ 2100 , JAZZ 2260 . A continuation of JAZZ 2100  with emphasis on advanced elements of jazz improvisation (modal harmony, polychords, mixed scales, symmetric and “synthetic” scales, non-functional harmony, and chromaticism). All of these elements will be studied in relationship to style, form, and analysis.

The course focuses on the skills and knowledge required for developing a new global venture.  From the perspective of a start-up entrepreneur, we will examine the key success factors in creating a new business with a focus on international markets.  Specifically, the course will concentrate on training students in recognizing business opportunities in different countries, global market entry, global business plan writing and global enterprise management.

  • ENTR 3900 - Invention, Innovation and Technology Commercialization (3)


    Prerequisites: JUNIOR classification and   for Entrepreneurship Concentration Students.  You will not be allowed to enroll in this course without having first satisfied all of the prerequisites. Invention, Innovation and Technology Commercialization intends to help you understand the process of taking a technological invention and how using different innovative methods you can take it from an idea to creating a venture that will help commercialize it.  The course will primarily focus on University Technology Transfer processes and grant writing to access SBIR/STTR funding.

    What the course offers?  The course offers to help you differentiate between invention and innovation and understand how you can continuously improve your discovery and innovation process.  It also takes you through the process of developing the idea into a full-fledged product, the legalities associated with it, and the strategic marketing and financial decisions you will need to make in order to commercialize the product.

    How the course is designed to facilitate learning?  The course like entrepreneurship is all about action.  While interactive lectures and audio and video presentation will accompany the learning process in every class, the primary focus will be on two projects.  The weekly case study project will take the entire class individually through the invention, innovation and commercialization process.  The second project will be oriented around developing your own ideas or inventions into and carrying out a feasibility study to check if your invention is marketable resulting in a grant proposal for further funding for the development of your product.

The course describes the needs and techniques for creatively recognizing and developing new ventures with real social value that contribute to the society at large and support long-term economic growth and sustainability.  This course will focus on creating social value through the use of high technology that can have the maximum benefit to the recognized social problem.

    What the course offers?  The course offers to take you step-by-step through the entire process of recognizing and starting a new social venture.  It trains you in community impact studies and needs assessment analyses that help develop social value based ideas.

    How the course is designed to facilitate your learning?  The course like entrepreneurship is all about action.  While interactive lectures and audio and video presentation will accompany the learning process in every class, the primary focus will be on case study analyses, and community study impact exercises applied to real world social venture.

    Prerequisites:   ;   ;   ;  .  You will not be allowed to enroll in this course without having first satisfied all of the prerequisites. The New Venture Management Consulting is the capstone course for the Entrepreneurship Concentration.  The course offers to take you step-by-step through the entire small business management process in an Information Technology (IT) based company.  It briefly reviews the new venture creation process and explores techniques for enhancing the marketing, operations and profitability of the existing business through a series of consulting exercises for real world IT based companies.

Through agreements between the University, School of Business, and an employer, the student may receive course credit for an internship or cooperative education experience which contributes to the student’s education and potential career opportunities in their selected major and concentration. Internship assessments and employer evaluations are documented in a formal report and presentation to the University community. Course may be taken as a restrictive business elective or unrestrictive elective. The student will attain approval from the lead professor and course instructor prior to enrolling in the course. All prerequisite courses must be completed with a grade of “C” or better.

    Prerequisites:   and   .  Admission to a degree granting college.  Any student who has not completed these requirements will not be allowed in this course with no exceptions. This course focuses on the tools and techniques required during the entire new product/service development process.  It is intended that, through required independent reading, classroom lectures, contests, and essay tests, the student will acquire 1) working knowledge of the fundamental principles of new product development (NPD); and 2) a greater ability to think both qualitatively and quantitatively about NPD problems.

    Media are powerful and permeate the fabric of our daily lives.  Media shape how we see others, society, politics, the world, and ourselves.  Media Literacy will provide students with the tools to access, analyze, evaluate and produce multiple types of mediated communication as they consider the five key questions of media literacy:  1.  Who created the message?  (Authorship) 2.  What creative techniques are used to construct the message?  (Format) 3.  How might different people understand this message differently from me?  (Audience) 4.  What values, lifestyles and points of view are represented or omitted froom this message?  (Content) 5.  Why is this message being sent?  (Purpose)  This course will help to develop students’ critical thinking and communication skills as they learn to interpret signs and symbols, and decode both implicit and explicit message.

  • MSCM 3430 - Media Images of Black Women (3)


    From the enduring images of the domestic, asexual Mammy, oversexed Jezebel and the overly aggressive Sapphire to the modern-day Claire Huxtable, Beyonce and Olivie Pope, African American women have had a long history of media representation that is both complex and problematic.  This course encourages students to think critically about the media as it relates to the portrayal of black women.  Students will explore how the media, its images and discourses, shape both policy about and perception of Black women.  By examining television, film, music, news and advertising, we will explore the ways in which elements of the media socially reproduce prejudice and misperceptions against black women and the ways in which they have resisted these representations.  Using Black Feminism as the theoretical framework, this course is designed to encourage students to consider some of the complexities the relationship between race, gender, and mass media.  Students will apply basic tools and techniques for evaluating, analyzing, and understanding these relationships as they are communicated through the mass media.
