HADM 4500 - Food and Beverage Production II (3) Prerequisites: HADM 2010 , HADM 3000 , HADM 3020 , senior status. This course is a continuation of HADM 3020 - Food and Beverage Production I (3) . Practical experience is provided in food purchasing and preparation of large quantities of food. Emphasis is placed on major menu categories, food equipment, luncheon-style restaurant service, sanitation, and maintenance. All prerequisite courses must be completed with a grade of “C” or better. (One hour lecture, 3 hours laboratory)
