FOOD 4500 - Nutritional Biochemistry (3) A study of the principles of biochemistry as it relates to human nutrition. Students will explore the role of nutrients in carbohydrate, lipid, and protein digestion and metabolism. Particular emphasis will be placed on the function of nutrients as defined by their chemistry and interrelationships between nutrient functions and diseases. Students will review and discuss recent journal articles related to the major nutrient classes. Students will also explore recent issues in the basic sciences related to nutrition and nutrient function.
